A brilliantly run Domaine. No fancy tricks here, just common sense practice.
Ploughing/soil aeration and using only organic fertilisers are all factors which give
this complex champagne such depth and character. The wines are fermented using
natural yeasts and receive between one and four years aging on their lees to clear,
before bottling for the second fermentation.

Very delicate, fresh and light with uplifting lemony flavours. A lovely aperitif.

This is not just another alternative to Champagne, it is a superb sparkling wine in
its own right. Jean-Louis Denois himself originally came from Champagne. He now makes
this rich and elegant fizz in the Languedoc from Champagne grape varieties. Using
Pinot Noir to give structure and depth and Chardonnay to add elegance and finesse.
